Liverpool scored 1 goal and Joe predicted 1 goal, so his end score stays at -1.
Because Joe predicted Liverpool will score 1 goal, and they did, he gets a Goal +.
Because Joe predicted Rovers will score 1, but they scored 2, he gets 1 goal + and 1 goal - So his position would look like this

Right result, so he starts from 5 points.

Goals + would be 2 For Rovers and 1 for Liverpool.
Goals - would be -2 for Rovers -2 for Liverpool so Joe’s result would look like this....
